Sunday Breakfast with Hal


Welcome to Sunday Breakfast with Hal. Today on the menu we're having two farm fresh eggs with potatoes, onion and bacon along with two pieces of multi-grain toast. mmmmmmm mmmmmmm.

So start by gathering your ingredients together and slicing your onion and potatoes into small bite size pieces.  I season the pan with left over bacon fat from Saturday's breakfast and some canola oil. Setting a low medium heat I put the potatoes and onion into the pan to simmer.  Stirring every 15 minutes until they are nicely browned. This should take about one hour and 15 mins.

After about 45 minutes add the bacon and cover to simmer stirring occasionally.


Finally at about 1 hour and 15 minutes put your toast on and push all the potatoes to one side of the pan and add the eggs. Season the eggs and cook to taste. What a great way to start your Sunday off! You can also prepare this by using a fresh pan for the eggs but there is no need to dirty another pan unless you don't want your food touching. 


So there ya have it. Sunday Breakfast with Hal. So yummy!  This goes great with Clementine oranges and a big glass of juice.
